The ultimate bean burger

I’ve been looking for a good, healthy, statisfying “meaty” and high protein vegan burger recipe for quite some time, unfortunately all of the recipes were either missing some flavour or they were breaking appart while taking a bite or they had to be fried in deep oil.

Well, this recipe has it all covered. The burgers are a bomb of flavour and nutrients, they don’t fall apart, and have a nice protein content.

Ingredients for three patties:

A tin of red kidney/black beans (240g netto)
300g of button mushrooms
A tablespoon of soy sauce
One red onion
Two cloves of garlic
Two tablespoons of smoked paprika
One small chilli
(you can replace this three ingredients with a good spicy steak or jerk seasoning, use 3-4 tablespoons then
Three tablespoons of chickpea flour
A juice of one lime
A big bunch of fresh corriander

For the stuffing:
One avocado,
BBQ sauce
Two slices of fresh pineapple
Two slices of tomato
A pinch of salt

For the wedges:
One large sweet potato
a pinch of cayenne
a pinch of dried parsley

Preparation:
Cut the button mushrooms in halves and then into thin slices. Pre-heat the frying pan to a high heat. Place the mushrooms onto the hot pan and stir around. Add the soy sauce and let the mushrooms release the water and brown . Rinse your beans and give them a good wash. When most of the mushroom water evaporates, add the beans to the frying pan, followed by the spices and onion and garlic. Stir around and squash the beans together with the mushrooms. Now add the chickpea flour and mix around. Chop the corriander, roll the lime. When the beans and mushrooms get squashy add the corriander and squeez the juice of the lime into the pan. Mix together, and remove from the heat.

Pre-heat the oven to 200degrees Celsius. Place a baking sheet on a tray. Cut the sweet potato into thin wedges and season it. While the oven is heating up prepare your bun and stuffing. Cut the pineaple (three 1 cm thick slices), cut the tomato, peel the avocado and cut into thin slices, you can use guacamole instead. Place the weges on the baking sheet.

Your patties should be now ready to form. Give the mix a taste and adjust the seasoning to your taste. Form three simillar size patties out the mix on the frying pan, it should all sitck together nicely. Place them on the baking sheet and put in the oven for 25- 30 min.

10min before the burgers are done grill the pineaple slices using an electric grill or simply add them onto the baking tray.

Time to assemble the burger. If you’re making a double pattie burger then place a bit of BBQ sauce on the bottom of each level. Put the patty on top of the BBQ sauce, add the baked/grilled pineaple followed by avocado, pinch of salt and tomato. There you go!
